The Most Delicious Chewy Chocolate Chip Cookies To Wow A Crowd
You can never go wrong with chocolate chip cookies, they’re a household favorite that will always be timeless. Whether you like them with a morning coffee, or dunking them in your milk, one thing is certain- chocolate chip cookies are here to stay and these ones take the cake!
The trick to good food is not in how long it takes to make, and these chocolate chip cookies are proof of that! They’re super easy to make and absolutely delicious. They have just the right amount of gooey and chewy to them, they melt in your mouth and are a real crowd-pleaser!
I made them at a recent party that I hosted, and I was inundated with requests for the recipe! These chocolate chip cookies are ideal if you’re looking for easy sweet table recipes!
If you’ve been following my blog for a while and have read my yummy brownie recipe, you’ll know how much I hate taking out my Kenwood. To be honest, it’s really mind over matter, but any recipe that doesn’t need a mixer tends to be made a lot more around here. I hate extra mess and extra washing up, these chocolate chip cookies are a one-bowl deal that only takes a few minutes to make.
But, whether you love or hate your mixer, you’ll love these cookies. Soft and chewy, they’re hard not to fall in love with! Serve them at a party, or simply make them for a healthier snack in your house. I say healthier because this recipe is free from margarine, it may have sugar but it’s still a lot healthier than most store-bought cookies.
I didn’t specify which oil to use because it’s really up to you. I’ve made it with canola oil and olive oil, both came out perfect. I also didn’t specify which flour to use. I usually use white flour for cookies because it’s always yummier, but I’m sure these work well with other spelt and wholemeal flour too.
How to Make These Soft & Chewy Chocolate Chip Cookies
Step 1: Cream together the oil and sugar until they’re well combined. You can use a mixer, or alternatively, a fork will do the job too. I do anything to avoid taking out my mixer, mixing with a fork takes a couple of minutes longer, but I way prefer it!
Step 2: Add the eggs and mix well.
Step 3: Add the rest of the ingredients and mix until everything is well combined, the batter should look similar to the image below. Once the batter becomes thicker, I tend to mix it using my hands (and gloves)!
Step 4: Roll about a tablespoon of the batter into a ball and place it on a baking tray. Since it’s quite a sticky batter, wet your hands a little to stop the batter sticking to them. Avoid the cookies from connecting, as I’ve done in the image below and spread them apart from one another.
Step 5: Bake at 180c for around 8 minutes for gooey cookies. Add a minute or two if you want them crunchier. Let the cookies fully cool before removing them from the baking paper.
Soft & Chewy Chocolate Chip Cookies
Ingredients
- 3/4 cup oil
- 1/2 cup white sugar
- 1 1/2 cups dark brown sugar
- 2 eggs
- 2 1/2 tsp vanilla essence
- 2 1/2 cups flour
- 3/4 tsp salt
- 1 tsp baking powder
- 1/2 bag chocolate chips
Instructions
- Preheat oven to 350°F
- Mix the oil and sugars
- Once fully combined, add the eggs and mix
- Add the rest of the ingredients
- Mix well
- Make balls around the size of a tablespoon and place them spread out on a baking tray
- Bake for around 8 minutes for soft and gooey cookies
- Let the cookies fully cool before removing them from the baking tray
