Easy Chocolate Mousse Recipe

We love chocolate mousse around here. In this house, there can never seem to be enough in the freezer. No matter how much I make, it is somehow always sneakily finished. But I don’t get too upset about it because my recipe is really easy! Which is exactly what I need because one thing I hate making is desserts. I love cooking, but when it comes to dessert, I simply don’t have the patience.

This easy chocolate mousse recipe uses just a handful of ingredients and delivers a rich, airy dessert that tastes like you spent hours in the kitchen. You did not. It’s simple, easy and delicious! It’s also got the perfect balance of flavor where it’s chocolatey, but not too heavy that you can’t finish it. It’s a winner!

One of my favorite parts of this chocolate mousse recipe is the cookies crumbs on the bottom. They are optional and if you have guests or family who are gluten-free, leave them out, but if not they are worth the extra effort! The combination of mousse and chocolate cookies is simply divine!

  • 300g good-quality dark chocolate
  • 9 large eggs, separated
  • 2/3 cup of oil
  • 150 grams sugar
  • 1 packet of chocolate digestives which is optional for crumbs at the bottom.
Chocolate Mousse Steps

Step 1. Crush the Cookies (Optional)

If you’re adding cookie crumbs to the bottom of your bowl or individual ramekins, use a food processor to blitz the cookies into fine crumbs. Or, if you’re like me and cannot be bothered to drag it out, pop the cookies into a bag and crush them by hand or with a rolling pin. It’s not actually faster, so I don’t recommend copying me;) Once crushed, add them to your bowl or mini containers.

Step 2. Melt the Chocolate

Break up the chocolate and place it in a double boiler or microwave with the oil. I have an induction hob, so I just put it straight into a pot on low heat and let it melt gently. Remove from the heat and allow it to cool slightly.

Step 3. Separate the Eggs

Separate your egg yolks and whites into 2 bowls. I know some people find this annoying but stick to the process because it’s worth it!

Step 4. Beat the Egg Whites

In a clean bowl, whisk the egg whites with a pinch of salt until nearly stiff. Gradually add the sugar and continue whisking until the mixture is glossy and holds firm peaks.

Step 5. Whisk Yolks

In a new bowl whisk the yolks for about 5 minutes until you see the mixture thicken. Add the melted chocolate and whisk on low until it’s fully combined.

Step 6. Combine

Pour the chocolate mixture into the egg whites and, using a flat spatula, gently fold them together. Don’t mix or stir vigorously, as the whites will deflate and lose their fluffy light texture.

Step 7. Pour into Bowl

Spoon the mousse into your prepared serving dish or ramekins. Refrigerate for at least 1 hour, or until set.

Ingredients
  

  • 9 Large Eggs
  • 150 Grams Sugar
  • 3 Bars (100g each) Dark Chocolate (Good quality bittersweet chocolate)
  • 2/3 Cups Oil
  • 1 Packet Chocolate Digestives (optional)

Instructions
 

  • Crush chocolate digestives into crumbs and put on the side
  • Melt the chocolate with the oil
  • Separate the eggs
  • Whisk the whites. When almost stiff, slowly add the sugar
  • In a new bowl whisk the yolks for about 5 minutes until it's thicker. Add the melted chocolate and whisk on a low setting
  • Pour the chocolate mixture into the whites and gently fold. (No whisking)
  • Pour into a bowl or individual containers.
  • Grate chocolate on top, or any other topping of your choice.
